Pumpkin Carving Contest Rules

·         All entries must be returned by October 31st by 9:00am; late entries can be shown but will not be included in the judging.

·         You can provide your own pumpkin if you wish.

·         Pumpkin must include carving, other crafting techniques ok.

·         No open flames are allowed in the Student Center so lit candles inside the pumpkins will not be permitted. Electronic lighting via battery power ok.

·         Any electronics to support the carved pumpkin must be battery powered. We are not accountable for providing power or lighting with your pumpkin.

·         Judging evaluation criteria

o   Artistic carving effort demonstrated in entry.

o   Originality of entry.

o   Amount of effort, skill, and overall work invested in entry.

·         Have fun!

Pumpkins will be on display October 31st until 4:00pm. At which time you can pick up your pumpkin and take it home to enjoy.

Constitution Week

Well its Constitution Week here at UVU.  Gotta say, I'm kind of excited.  Ever heard of David McCullough?  If you haven't you should look into his books.  He is a historian specializing in the American Revolution.  I personally own two of his books and am very excited that he is coming to UVU to speak this week.  Get your tickets while you can. 

As for the rest of campus, things seem to be getting into the swing of things.  Students are forming habits as to where to study (Library and Science building hallway seem to be the place of choice), sleep (out on the lawn under a tree is where I see most people), and eat (any Dining Service location).  Rockin' Robbies our new burger place seems to be doing great.  Personally I am hooked on their cheese burgers and over the rim milk shakes.  Here in the Valley View we stay very busy serving up everyone's favorites.  This week we have Baked Ziti for our Meatless Monday option, Tuesday don't miss out on our Navajo Taco, Wednesday is the ever popular Enchilada, Thursday we are premiering a Fish Taco, and Friday we have the Spicy Honey Chicken Wrap.

Summer Comes to an End

As with all good things, Summer is now coming to an end here at UVU.  Things are starting to get back into full swing here in Dining Services.  Prospective students are wandering the halls, random conferences and events are taking place and what is left of summer classes are finishing up.

On the business end of things we are looking to start hiring and training our fall staff.  Valley View is no exception to this rule and has officially hired a new Assistant Supervisor:  Ibrahim Tashman.  At this point we are looking to hire the rest of our staff.  For the most part we need people who are friendly that can work 20 hours a week during our lunch rush (11:00 a.m.-2:00 p.m -ish.).  If you are interested just click on over to the UVU.edu site, hover about Employment, Click on Human Resources, hover over Employment, and finally click on Open Positions.  (Or just click HERE)  You will need to search for Dining Services positions (there are a bunch right now).

Welcome Japanese Students

For those of you who may not have noticed last week we have a visiting group to our campus.  Every year a group of Automotive Japanese students come to UVU to learn about American Cars.  This year is no exception and a larger than last years' group came to visit us until the end of the month.  They tend to descend in one large group upon our eating establishments and love to try American food.  For those of you in a hurry, or just trying to beat a rush know that they usually eat between 11:45-12:15 each day.  For the rest of you stop on by and make a new friend- or 80.  I know we are! 

So on the behalf of UVU Dining Services I would like to say Welcome to all visiting students this summer.

Pardon our Construction

If its not one thing it is another right?  Well we have all become pro's at this new intersection and then it seems that the world decides to throw another wrench into things.  Dining Services is actually under construction as well this summer.  We will be receiving a Taco Bell and a new Burger Station.  Valley View is staying mostly the same, our changes will most likely happen during weekend hours and really wont change much.  We will have a bit of traffic congestion this month as the Upward Bound group shares the cafeteria with us.  We are trying to keep the flow organized so don't be afraid and let us know if you have any problems that we can fix.

Summer School

Ever noticed that when you are in Grade School that Summer school is only for those who failed and are not as smart as you?  Then in College it is the complete opposite, Summer School is for those trying to get ahead, save a buck, and get on with their lives.  I know I'm rambling, but I thought it was interesting.  I for one am not as strong as all of you scholars out there.  I survived one year of summer school and it did me in, never again!  For me summers are to work and earn the money for next year.  Add in a bit of fun in the sun and I am good to go.

Meatless Monday

Once again it is Meatless Monday.  Here are a few random facts about College eating habits:
66% of freshmen don’t consume the recommended five servings of fruits and vegetables a day.
50% of all students don’t get enough fiber (25 grams a day).
60% eat too much artery-clogging saturated fat.
59% of students surveyed said they know their diet has gone downhill since they went to college.

For today's meatless option we are offering a Sour Dough Bread Bowl filled with your choice of Vegetarian Chili or Tomato Florentine soup.  Hearty and filling, especially in our spring weather that can't quite decide if it should stay warm or freeze us out yet again.

Spring Finale

Well it is that time of the semester again. Everyone is rushing to finish last minute projects that they really have known about all semester, just procrastinated to the end, stress levels are at an all time high, and we are all looking for that little ray of sunshine to help us through the day. No literally. Spring as always loves to tease us. Warmth was here, letting us dream of sunshine and summer just around the corner, distracting us from the stress of finals and projects. 

Up here in the Valley View we have a beautiful view, be it of the cold snow that surprised us today or the budding green we hope will come back soon.  In an effort to help de-stress everyone here on campus we are offering comfort foods and some healthy options depending on which one best helps you.  There are Rockstars the 'keep you goin' kind as well as the new 'relax' kind.  We will be showcasing all of your Valley View favorites in the next couple of weeks so be sure to stop by and pay us a visit.

Guest Post from the Chef

Last week we enjoyed some Korean Spicy Pork made by our own Chef Jesikaa Kyungmi Rho.  Here is waht she has to say about the dish:

Korean spicy pork is one of Koreans' favorite dish. It can go from  mild spicy to fire burning spicy. It has many names that are determined by slight variations in recipes. However, Deji-bulgogi is used most commonly. 
Basically any part of pork can be used but we used shoulder this time. Different thing about Korean meat dish compared to American one is that we add a lot of vegetables, such as cabbages and green onions, into it. The main ingredient for the sauce is Gochujang, which is authentic Korean chili sauce that can be used raw or cooked.

Attention: Gluten Free and Vegetarian Diets


Valley View has something for you.  No really, we do!  We have officially rolled out our new Gluten Free and Vegetarian signs.  Quite often we have options other than the salad bar, but many people do not realize that they are safe.  In an effort to help bring awareness to ourselves and our customers we will be marking Gluten Free and Vegetarian options with these signs.

Our chefs are even preparing gluten free soups.  They try to have at least one everyday.

End of First Block

Caught in the Spotlight

We are always looking for fun new things here in Dining Services.  This past year we have rolled out a plethora of  "Grab and Go" options for students and staff.  The pantry does a wonderful job producing each and every option and are constantly thinking of ways to make them fresh and new.  So far our options include:

Veggie Box 
 Deli Sandwiches
Croissant Sandwiches
Wraps 
Fresh Fruit and Yogurt Parfaits 
 Cake in a Cup 
Entree Salads
 

Currently our wonderful marketing girl, Emily, is creating new easy to read labels with ingredient information.  Which brings us to our next big project:  Allergy information.  We are trying to bring food allergy awareness to our employees as well as our customers and provide more options for those with food allergies, namely those with Gluten allergies. 

There seems to have been a surge in gluten free dining recently, according to Wikipedia:
"Gluten-free diets (for reasons other than celiac disease) have become a recent trend."  Starting in the next few weeks we will be marking any gluten free items on our menu each day.  Along that same line, we will also be making our vegetarian items. 

There has been a surge the past year or so among our student population to eat healthier.  We want to assist in this all that we can, while still providing the homestyle comfort food we are known for.  We hope that by promoting the options that we do have, those students will be able to find their lunch easier, and maybe along the way we will draw the attention of a few others as well.
